Production Method of Dried Apricots
Dried apricots are produced in two ways: traditional and industrial.
The traditional method (unsulfured apricot), which uses sunlight, results in dried apricots with a darker color, known in the market as “black apricots.”
In contrast, the industrial method produces apricots with a more golden color and higher product quality, with the only difference being the moisture content.
The steps for producing dried apricots are as follows:
- First, the fruit is harvested.
- The large fruits are separated and transported to the factory.
- In the factory, the fruits are first washed and then cut into two halves.
- The inner part of the fruit should face upward.
- The apricots are then fumigated with sulfur dioxide (maximum 2000 ppm).
- They are placed in the sun to dry and then passed through an X-ray scanner to remove materials like glass and stones.
- Finally, they pass through a metal detector to ensure any metal present in the dried apricots is removed.
Harvest time of Dried Apricot: The harvest time for apricots in Iran varies from early June to mid-August, depending on the geographical region.

Dried apricots are usually produced and offered in various sizes. These sizes may vary depending on the producer and the type of usage, but there are several standard sizes that are generally found in markets.
- Large Size: Dried apricots in larger sizes have the greatest dimensions and weight. These apricots are typically used for eating as a snack, cooking, and decorations.
- Medium Size: These apricots are smaller than large ones but larger than small ones. They are also suitable for eating and for use in cooking and making desserts.
- Small Size: Small-sized dried apricots are mainly used in items such as trail mixes, baking, and decorations.
There are various standards, and some producers may use different sizes and names for dried apricots, but these sizes mentioned are commonly used in the industry.
