After harvesting, they are taken to large rooms where they are hung up like grapes to dry. This type of barberry is dried in the shade, which preserves its excellent color and taste.

The drying process occurs at a cool temperature close to room temperature. As the berries dry, they puff up, which is why they are called Puffy Barberry.

Once fully dried, the clusters are taken down, and any branches, wood, stones, and debris are removed before the product is brought to market. Due to the difference in the drying process between Anari Barberry and Puffy Barberry, the latter requires a longer preparation period, being available 3 to 4 months later.
